Veg Biryani

Biryani is one of the most widely consumed recipe in main course.It tastes heavenly when it is prepared correctly.It is favorite dish for many people irrespective of their age.Now let's start with ingredients and procedure for preparing Biryani.

Ingredients :


Basmati rice - 1 cup
Chopped Potatoes - 1/4cup
Chopped Carrots - 1/4 cup
Chopped Beans - 1/4 cup
Cauliflower - 1/4 cup
Fried onions - 1/4 cup
Fresh Curd - 1/2 cup
Green chillies - 2-3
Broad beans - 1/4 cup
Coriander - 1/2 cup
Mint - 1/2 cup
Ginger Garlic Paste - 1/2 spoon
Garam masala - 1 spoon
Biryani powder - 5-6 spoons (varies accordingly to our taste)
Bay leaves - 2
Cinnamon - 2
Cloves - 2
Cardamom - 2
Star Anise - 1
Cumin seeds - 1/4 spoon
Oil - 5-6 spoons
Ghee - 2 spoons
Salt - As per needed
Turmeric - 1/4 spoon

Procedure : 


Soak the basmati rice for 30min.In a bowl, add water and bring it to boil.Add 1 spoon oil, salt, cloves , bay leaf, rice and cook the rice until it is 80 percent cooked.Once is rice is cooked keep it aside.

Heat the oil, ghee in a pan.Add cumin seeds, cloves, cinnamon, bay leaf, star anise, cardamom,  ginger garlic paste, turmeric,all veggies, green chillies and cook until they cooked nicely.Mix garam masala and biryani powder in curd and add the mixture to veggies that are cooked.Add coriander, mint leaves and stir the mixture well until the masala is equally coated to all veggies.Now add fried onions and cooked rice to the mixture and stir it well.Finally add some more coriander leaves.

Most yummy Biryani is ready to eat.

Baby Corn Tomato Curry

Baby Corn is of the vegetable which contains very less fat.Baby corn is a rich source of fiber. It also contains  lot of proteins and vitamins.
Consuming such rich source and healthy vegetable is necessary for our body.So let's start with Baby Corn Tomato Curry recipe !!!!

Ingredients :


Baby Corn - 1 cup
Tomatoes - 2
Green chillies - 2
Onion - 1
Green Peas - 1/2 cup
Red Chilli powder - 1 spoon
Dhaniya powder - 1 spoon
Ginger Garlic Paste - 1 spoon
Salt - As per needed
Sugar - A pinch
Cream - 1 spoon
Coriander leaves - 2 spoons

Temper :

Oil - 2spoons
Mustard seeds - 1/4 spoon
Cumin seeds - 1/4 spoon
Curry leaves - 2-3

Procedure :


Heat the oil in a pan and temper it. Add green chillies, onions, ginger garlic paste, green peas and cook it for 3-4 min.Now add baby corn and close the lid for few minutes until they are cooked. Add tomatoes,  red chilli powder, dhaniya powder and cook until tomatoes become soft.Finally add coriander leaves.

Tasty Baby Corn Tomato Curry is ready to eat.

Tomato Aloo Methi

Tomato Aloo Methi is very tasty recipe which can goes well with either roti or rice.Methi is the most flavor adding agent in this recipe.So let's start to prepare! !!

Ingredients :


Fenugreek leaves - 1/2 cup
Tomato - 1
Boiled potato - 1
Salt - As per needed
Coriander leaves - 1/2 cup
Green chillies - 3-4
Onion - 1 (Medium Size)

Temper :
Oil - 2spoons
Mustard seeds - 1/4 spoon
Cumin seeds - 1/4 spoon
Curry leaves - 2-3

Procedure : 


Heat the oil in a pan and temper it. Now add onions, green chillies and let them fry for 3-4 min. Now add Fenugreek leaves and fry until the raw smell is lost.Now add tomatoes and cook till they become soft. Now add boiled potatoes, salt, stir the mixture well and cook it for 4-5 min.Finally add chopped coriander leaves.

Tasty Tomato Aloo Methi is ready to eat.

Capsicum Besan Masala

Capsicum is one of the vegetable which is available in many attractive colors.Apart from it's eye caching colors, it also helps our body in many ways.This can be used either in salads or in curries. Capsicum Besan Masala is one of the tasty curry which takes very less time to prepare as capsicum is cooked very fast.

Ingredients :

Capsicum chopped - 1 cup
Onion - 1
Dhaniya Powder - 1 spoon
Red Chilli powder - 1/2 spoon
Ginger Garlic Paste - 1/2 spoon
Salt - As per needed
Besan - 1 spoon
Temper :
Oil - 2spoons
Mustard seeds - 1/4 spoon
Cumin seeds - 1/4 spoon
Dry red chillies -2
Curry leaves - 2-3

Procedure :

Heat the oil in a pan and temper it. Now add onions, ginger garlic paste and cook it for few minutes.Add chopped capsicum and cook it for 5-6 mintues. Capsicum is cooked very fast, so there is no need to keep the lid of a pan while cooking.Now add dhaniya powder, salt, red chilli powder and stir well.Now finally add besan to the cooked mixture and stir until the raw smell of the besan is lost, it hardly takes 2- 3 mintues.

Broad Beans Seeds Fry

Fresh broad beans are sweet and delicious pod beans with a smooth creamy texture.These beans contain lot of fiber and are also rich in proteins
Broad Beans Seeds Fry is one of the easy recipe and can have it either as a snack in the evening or as a curry.

Broad Beans - 1 cup

Onion - 1
Dhaniya Powder - 1 spoon
Red Chilli powder - 1/2 spoon
Cumin powder - 1 spoon

Temper :
Oil - 2spoons
Mustard seeds - 1/4 spoon
Cumin seeds - 1/4 spoon
Dry red chillies -2
Curry leaves - 2-3

Procedure :

Heat the oil in a pan and temper it. Now add onions and cook it for few minutes. Add chopped tomatoes and cook until they become soft.Add broad beans seeds, red chilli powder, cumin powder, dhaniya powder, salt and cook them until the seeds are cooked.Finally add chopped coriander.

Aloo Chat

Aloo Chat is very common and famous appetizer in buffets. It tastes awesome if all the ingredients are added correctly.Let's start preparing it !!!

Ingredients :


Boiled Aloo - 1
Chopped onion - 1 (Medium size)
Chopped green chilles - 2
Red Chilli powder - As per needed
Salt - As per needed
Cumin powder - 1/2 spoon
Coriander powder - 1/2 spoon
Chat Masala - 3/4 spoon
Chopped Coriander - 1/4 cup
Chopped Mint - 2 spoons
Tamarind sugar paste - 1/2 spoon
Turmeric - A pinch
Curd - 1 spoon
Sev - 1 spoon
Lemon juice - 1 spoon


Procedure : 


In a bowl, add all the ingredients except curd, sev and mix well.Keep aside for 10-15 min so that all the flavours are nicely coated to Aloo.
Finally garnish it with curd and Sev before serving.

Cauliflower Masala

Cauliflower Masala is one of the recipe which touches each and every taste bud.This tasty gravy can be served mainly with rotis, naan. Let's start preparing it !!!

Ingredients :

Cauliflower - 1 cup
Chopped onion - 1 (large size)
Tomato puree - 1 cup
Ginger Garlic Paste - 1/2 spoon
Sesame seeds - 2 spoons
Poppy seeds - 2 spoons
Grated coconut - 1spoon
Cashew paste - 1/2 cup (Cashews should be soaked in water for 10 min before grinding)
Green chillies - 3
Red Chilli powder - 1/2 spoon
Garam masala - 3/4 spoon
Kasuri methi - 1/2 spoon
Cumin powder - 1/4 spoon
Coriander powder - 1/2 spoon
Salt - As per needed
Turmeric - 1/4 spoon
Coriander chopped - 1/4 cup
Spring onions - 1 spoon
Cumin seeds - 1/4 spoon
Oil - 4-5 spoons


Procedure :

First of all, fry the sesame seeds and Poppy seeds for 2-3 min. Add these fried seeds, grated coconut, water to grinder and make into fine paste.
Heat the oil in a pan.Add cumin seeds,turmeric, onions, ginger garlic paste and cook it for 3-4 min. Add tomato puree and cook until oil oozes out.Now Add cashew paste, seeds paste, red chilli powder, coriander powder, cumin powder, garam masala, salt and cook it for 7-8 min.Now add cauliflower pieces and cook it for 4-5 min.Finally garnish it with chopped coriander and spring onions.
Tasty Cauliflower Masala is ready to eat.

Palak Pakoda

Palak Pakoda is one of the tasty snack which can be enjoyed with tea.It takes very less time to prepare with limited number of ingredients. So let's start preparing !!!

Ingredients :


Gram Flour - 1 cup
Rice flour - 1/2 cup
Ajwain - 1 spoon
Cumin powder - 1/2 spoon
Coriander powder - 1/2 spoon
Turmeric - 1/4 spoon
Spinach leaves - 1 cup
Salt - As per needed
Oil - As per needed

Procedure :


In a bowl, add gram flour, rice flour, ajwain, cumin powder, coriander powder, turmeric, salt, water and make into semi thick batter.Now add the spinach leaves and mix well until each leaf is coated properly.Finally deep fry the leaves.

Paneer Tikka Masala

Paneer Tikka Masala is a famous spicy gravy in which paneer and veggies are marinated.It tastes heavenly with roti, naan, chapati.So let's start preparing !!!!

Ingredients :


Paneer Cubes - 1 cup
Green bell pepper cubed - 1/2 cup
Tomatoes Cubed - 1/2 cup
Onion cubed and layers separated - 1/2 cup
Chopped onion - 1
Tomato puree - 1cup
Chopped coriander leaves - 1/4 cup
Chopped Spring onions - 1 / 4 cup
Fresh Yogurt - 3 spoons (should be thick without any water)
Red chili powder - 1 spoon
Kasuri methi - 1/2 spoon
Ginger Garlic Paste - 1 spoon
Turmeric - 1/2 spoon
Lemon juice - 1 1/2 spoons
Coriander powder - 1/2 spoon
Cumin powder - 1 / 2 spoon
Garam Masala - 3/4 spoon
Cumin seeds - 1/4 spoon
Salt - As per  taste

Procedure :


Marination :
In a bowl add yogurt, red chilli powder, kasuri methi, salt and lemon juice.
Add paneer, cubed onions, tomatoes, bell peppers and mix well. Check each and every piece should get coated well. In a pan, heat 2 spoons of oil, add the above coated mixture, fry them on both sides and keep them aside.

Heat the oil in a pan.Add cumin seeds, turmeric, onions, ginger garlic paste and cook them for 3-4min.Now add tomato puree, red chilli powder, coriander powder, cumin powder and cook until the oil oozes out.Now add the 1/2cup of water, salt, garam masala, fried paneer and veggies into the mixture. Cook them for 3-4 min.Finally garnish with chopped coriander and spring onions.

Moong Dal Halwa

Moong Dal Halwa is a popular and rich halwa recipe from North India.Moong Dal Halwa is usually made on celebratory or festive occasions like Holi, Diwali, marriages etc.
I would suggest to use non stick pan or kadai to make this moong dal halwa.

Ingredients :


Split yellow Moong dal - 3/4 cup
Sugar - 3/4
Water - 3/4
Ghee - 1/2 cup
Cardamom powder - 2 spoons
Fried cashew and badam - 2 spoons
Kesar - 2 pods

Procedure :


Roast moong dal till it turns to golden brown.Grind it in to powder and keep a side.
Now mix water and sugar in a vessel and keep on stove top. Stir continously until the sugar is dissolved and switch off the flame.
Take non stick pan add ghee. Now add the moong dal powder and fry until the nice aroma comes out, add cardamom powder to it and stir continously. Now add ghee sugar water to it and cook on low flame for 15-20 min till the ghee oozes out.Don't allow the mixture to stick to the pan.Add kesar to it and stir again . Lastly add dry fruits and serve hot
Tastes yummy if it is served hot..
If you wish you can prepare directly with out roasting moong dal , this comes in light yellow color. I just tried by roasting moongdal, which came out yummy ..

Veg Manchow Soup

Most of us enjoy having soup in winter/cold season.Veg Manchow soup is one of the famous hot and spicy chinese soup.The taste of Manchow soup cannot be described unless we try it. So let's start preparing it!!!

Ingredients :


Vegetable Stock :
Chopped Cabbage - 1/4 cup
Chopped Carrots - 1/4 cup
Chopped Spring onions - 1 spoon

Soup :
Vegetable Stock - 2 cups
Oil - 1spoon
Chopped Garlic - 1/2 spoon
Chopped Ginger - 1/2 spoon
Chopped Green chilles - 1/2 spoon
Chopped Cabbage - 1 spoon
Chopped Carrots - 1 spoon
Chopped Coriander - 1/4 spoon
Soy sause - 1/2 spoon
Pepper powder - 1/8 spoon
Corn flour - 1spoon (dissolve in 1/2cup of water)

For Topping :
Fried Noodles

Procedure : 


Preparing Vegetable Stock :

Heat 6 cups of water, add all the vegetables and boil them for 15-20 min on a low flame.Allow the vegetables to settle at the bottom of the vessel and pour out the stock.Discard the vegetables and keep aside.

Preparing Soup :

Heat oil in a pan on a high flame.Add garlic, ginger and green chillies and saute for few seconds.Now add cabbage, carrot, coriander and saute for 1-2min. Add vegetable stock, mix well and cook on a high flame for 2-3 min by stirring occasionally. Add soya sause, prepared corn flour mixture and cook for 2-3 min. Finally add pepper powder, mix well and serve immediately topped with fried noodles.

Very hot Veg Manchow soup  is ready to eat.

Badusha

The very common and tasty sweet seen in many marriages is Badusha.This is one of the sweet which is loved by many people.Preparing this at home does not take much time.So let's begin to prepare the yummy Badusha !!!!

Ingredients :


All purpose flour - 1cup
Ghee/Butter - 4 spoons
Fresh yogurt - 2 spoons
Baking soda - 1/4 spoon
Sugar - 1 cup
Water - 1 cup
Lemon juice - 1/2 spoon

Procedure : 


In a bowl add All purpose flour, ghee, yogurt, baking soda and mix gently without applying any pressure.Add little water and make a semi soft dough without applying much pressure.Close the bowl and keep the dough aside for 15min.
After 15min, just mix the dough once, make them into a medium size balls and make a dent in the middle.Heat the oil in a pan and deep fry in a low flame them until nice golden brown color is seen.


Preparing Sugar Syrup:

In a bowl add sugar, water and boil it until one string consistency syrup is formed.Add lemon  juice in order to avoid crystallization.

Finally dip the deep fried dumplings into sugar syrup for 3-4 min.
