Ingredients :
Basmati rice - 1 cup
Chopped Potatoes - 1/4cup
Chopped Carrots - 1/4 cup
Chopped Beans - 1/4 cup
Cauliflower - 1/4 cup
Fried onions - 1/4 cup
Fresh Curd - 1/2 cup
Green chillies - 2-3
Broad beans - 1/4 cup
Coriander - 1/2 cup
Mint - 1/2 cup
Ginger Garlic Paste - 1/2 spoon
Garam masala - 1 spoon
Biryani powder - 5-6 spoons (varies accordingly to our taste)
Bay leaves - 2
Cinnamon - 2
Cloves - 2
Cardamom - 2
Star Anise - 1
Cumin seeds - 1/4 spoon
Oil - 5-6 spoons
Ghee - 2 spoons
Salt - As per needed
Turmeric - 1/4 spoon
Procedure :
Soak the basmati rice for 30min.In a bowl, add water and bring it to boil.Add 1 spoon oil, salt, cloves , bay leaf, rice and cook the rice until it is 80 percent cooked.Once is rice is cooked keep it aside.
Heat the oil, ghee in a pan.Add cumin seeds, cloves, cinnamon, bay leaf, star anise, cardamom, ginger garlic paste, turmeric,all veggies, green chillies and cook until they cooked nicely.Mix garam masala and biryani powder in curd and add the mixture to veggies that are cooked.Add coriander, mint leaves and stir the mixture well until the masala is equally coated to all veggies.Now add fried onions and cooked rice to the mixture and stir it well.Finally add some more coriander leaves.
Most yummy Biryani is ready to eat.
